How can I change the default payment method?

Go to Admin ->System -> Configuration ->Payment Methods,

 then change the Sort Order. You'll need to configure the sort order each of these individually.

Credit Card (whomever you choose as your provider) = 0, PayPal = 1, Check/Money Order = 2.
